There are two methods to harvest the coffee cherry from the coffee shrub: Stripping or selective picking
All coffee cherries are stripped from the coffee shrub, regardless of their degree of ripeness. Depending on the region, this is done manually or mechanically. After all cherries have been harvested, over ripe, ripe and under ripe cherries are separated. Ripe coffee cherries will be processed further.
Selective picking is very labour-intensive and only used for harvesting high quality coffee. Here, only the ripe coffee cherries are picked from the shrub and are used for further processing.
